Wow. I just baked up a storm. Seriously. I wanted to have meals ready for the week, so I got to work.
Here’s what’s on the schedule:
- Three Grain Chewy Energy Bars
- Cold Veggie Summer Salad
- Chickpea Hummus Burgers
- 2 cups cook lentils
- Baked zucchini and green beans
The chewy energy bars are in the oven and the lentils are on the stove top. Everything else is prepared! Totally worth it.
This weekend has been fun and extremely random. My friends and I had plans to go to a bar with dueling pianos on Friday night, but it ended up being closed down! We completely switched up our plans and went cosmic bowling and then to Munchers bakery. I can’t say I was upset by the change of plans. I don’t mind kickin’ it old school every so often.
Munchers is a 24/7 bakery in my college town. I got an M&M cookie and warmed it up in the microwave there. It was cookie heaven!
Saturday morning I woke up to a big bowl of deliciousness…
Walnut were the perfect finishing touch! The rest of the bowl consisted of pumpkin, greek yogurt and cinnamon.
I did a quick interval run and then got on the road to go home because my brother is in town! Nothing is better than family. Dinner with the grandparents!
Guess what? I’m happy to report that my yoga intentions are going really well. I practiced 6 days this week!
